That you can steal life from undead monster types? Is there some obvious explanation from the Lore of the series that I'm missing. By the way thank god we can, otherwise this difficult game becomes rather untenable.

Well, only from those who have flesh. You can't steal life from skeletons or ghosts. So I guess that means life leech represents eating their flesh.

It may be a leftover from earlier game builds, which included organs and Barbarian skill to collect them, to be used for crafting. I always just thought about it as if you'd suck the Bone marrow from the undead :'D
or maybe killing the undead gives you such joy that literally heals your body and soul
