What do you do with your

Standard of Heroes?
(throw them all away? keep them all? keep only one?)

(I keep only one...)

I leave it on the Ground in

Uber Tristram.

Keep them to know how many times that char beated Uber T, but I have only done about 15 runs so far, all chars included.

Since they're useless, I grab my Torch and leave the Standards of Heroes lying where they are.

I only keep them to divide stuff I want to hold so they don't get in a way of stuff I want to sell -- for example jewels and

Junk Jewels.

I keep them all to remind me of how many times I defeated the Ubers.
I made a mule for them as I'm playing offline and I have unlimited slots.

Kept enough to fill personal stashes to an even horizontal line with the obligatory "keep 1 class set each just because..", while then using the remainder of the space for actual stuff to keep (not bothering with any actual mules so each real char gets to keep specific types of stuff).

Beyond that...they are pointless and since Blizz won't be doing anything with D2 anymore they will remain pointless and there's been way too many uber kills to "store for counting purposes". So the rest just stays on the floor.

I have some of them kept in one stash in case Blizz changes its mind and decides to add something new to the game and actually finds a way to utilize SoH.
