Gray is just the socketed version of White items. Blues, rares, uniques, sets and whatnot will all stay what they are, except with sockets (or 1 socket, for the most part - certain exceptions apply). They follow their own rules on max sockets as well so if you socket a blue
Monarch
for example, you won't get 4 sockets added to it as you would with a White one. You're subject to "magic item" rules which caps you at 1-2. The only way to get past that is with a socket prefix but
Larzuk
doesn't help you there, that has to be on the blue to begin with. Similarly, you also can't build runewords in any blue items, even if you did have enough sockets in them.

A bit of a tangent here but...

As far as I'm tracking, the only *good* and desirable socketed blue item in the entire game is the highly coveted and rare Jewelers
Monarch
of Deflecting (JMOD), which is great for javas.

Not quite. Given, that one is probably the best example because it is just .. well, nuts. :)
But there's others that are highly desired as well, simply because blues can get certain affixes that other items simply can't. Such as a 3-socket 30run/walk

You also have the JSTOD which is the Jewellers
Sacred Targe
Of deflecting (and I believe the other elite Pala shield bases) which can be very good with a high all res automod. I was looking on my browser for it and found out some item selling sites would sold it for 1500ā‚¬ minimum xD
