Get both.
You can still stack up plenty of CB (100 is complete overkill imo) while keeping things like Grief for solid baseline dmg at the same time.
CB dmg is based on mob current un-scaled life and hence either sucks or ends up exceptional, depending on what you're fighting. Smack a boss at full health and CB is fantastic. Smack a boss near Death or clear small stuff on the way to said boss and CB kinda sucks. You still want solid baseline dmg to take care of all of the trash along the way as well as the last few % of any boss.
Exact ideal weapon choice obv. depends on the actual class/build you're talking about as well as what you do with it.

So from the other side. Death runeworld lvl99 character - 50%CB, 49% Deadly strike. Barb can hold 2 od them. Do I have 100% CB and 98% DS? On the paper, it's insane... adding Gore Rider we have both >100%. So what will be kicking - CB or DS?

If I remember correctly, for Barb the CB, DS are calculated on each hand, not combined, which means you get 50% + 15% + rest CB from other items for each hand.

CB and DS stack. However, as Schnorki already stated above you need a high base dmg for the most part (well in case of DS it correlates directly). If you ever played with the Sorc, then you can somewhat compare CB to Static. A little note:
CB is active for the whole duration of fight. SF stops at 50% HP.
CB/DS doesn't go thru phy imm. SF doesn't go thru light imm.
CB is single target, SF is AoE.
CB benefits from -phy res if monsters have it more than 0, SF doesn't benefit from -light res...
But the basic mechanics are pretty much all the same.
Now also don't forget that CS ("critical strike") and DS ("deadly strike") doesn't stack for Zon, Sin and Barb. If you want to go deeper into it, the formula for double dmg is: CS + DS*(100-CS)/100
Additionally, CS and DS can't occur both at the same time -- so you can't roll for the 4x dmg, they add up as in formula above to determine the real chance of 2x dmg.
To add even more options and confusion... OW ("open wounds") also exists and is a very god darn good thing to have (especially when fighting DClone or Ubers). It negates target regen and it makes them bleed (DOT dmg). OW's dmg also scales with clvl...
