I don't know where the 600 comes from, but quoting the Uber Meph page :
300% resistance is needed to neutralize Über
Mephisto
's level 20
Conviction
aura. 270% counting the
Prison of Ice
act 5 quest.
75% max resistance. 100% for the Hell difficulty penalty. and 125% for Über

You may be able to add a little when in overcap through Resist passives + runes, but still 305 or 310 is enough.

The 600 is from rounding that 305 or 310 to 300 for lightning and then considering 300 for fire because I like to not have low fire res when standing next to
Mephisto
just due to minions taking pot shots and the possibility of diablo showing up.

There is so much flexibility in where you get your res from (cb gloves, ow
Belt
, rings, amulet, charms) and the various ways that they can roll, that I just consider a total amount of res needed and then slosh items around to fit. So 300 lit, 300 fire, is 600 total. Cold and poison are meh. My shield, which gives me 44 all res, I consider to be worth 88 (44 lit + 44 fire).

Fire attacks from Meph and his minions are not really significant. With my necro I do Meph with 300 light and 225 fire - goes all fine (though minions do absorb some stuff), if Big D shows up I just need to reposition.

It's worth considering that I could drop the requirement to 500 or something, though it would be fun to be geared to the point where I just drop in on all three and face tank all of them at once.

Uber Baal
as a ranged build with low cold res, you might just die instantaneously, particularly if your attack skill of choice is a multi/fast-hitting attack or spell (with lots of projectiles). Mosaic with all charges blazing comes to mind. But sorcs and zons might have a similar experience. His
Chilling Armor
can really hurt.
