If the paladin puts points in Holy Fire does it all add together lvl 60+? Dragon Dragon HoJ skill tree?
No. HF from items stack together, but your hard points into skill doesn't stack with them.
* I trade both ladder and non-ladder, please check before asking.
* All my trades are for runes, keys (especially KoT and KoH) and essences!
This applies to all items with auras:
the levels of different items are added together (so two Dream grant L30 Holy Shock).
If you (or your Merc) try to use the same aura an item grant, only the higher-level aura (skill x items) will take effect.

Only aura levels from equipment stacks. points from auras os skill tree don't stack with auras from equipment.
Well, fire sorceress is an option. I usually stick with Demon Machine myself. The Holy Fire aura does add a bit of punch to the explosive Bolts, but I usually use the armour only as Call To Arms/Spirit on switch is really nice)

For the Demon Machine Enchant Sorceress, don't know if a single Dragon armor would add much damage...
On paper, normal armor (or Jeweler's) with 4 Rainbow Facet: Fire Death / Rainbow Facet: Fire Level-up will add more damage
Each facets add 17-45 fire dmg for a total of 68-180 fire dmg (124 avg) with 4
and facets add extra % fire dmg (12-20) and fire Pierce (12-20).
while Holy Fire L14 adds just 99-150 fire dmg (124.5 avg)

Back before Flickering Flame and sunder charms my build was a mix mash combo of Dream Helm ( Lightning Mastery 20), Warmth 20 Demon Limb, Dragon armour, Fire Mastery 20 and an Insight merc.
Oh the good old days.
Though I remember that build having serious issues where I had to swap out Demon Limb from the Cube for Passion Phase Blade (it may have been another weapon).
Build probably still works.

Fire Mastery and Flickering Flame (or other sources of fire pierce - like Infinity) will affect the "+fire dmg to attack" from Holy Fire and from Rainbow Facet: Fire Death / Rainbow Facet: Fire Level-up in the same way so no need to include them on that comparison.
About the tick damage, I think it will be very little with only 1 Dragon to make difference...
not only the level will be low L14 x L44 with 2 x Dragon + Hand of Justice (way less base damage and radius)
but the pulse damage is multiplied by the number of items, so even if the level would be the same, 1 item will deal 1/3 of the pulse damage of 3 items...
(cannot find the link about that now... but it already showed up on other threads...)
To compare, people in general do not play Dragondin Paladin with just 2 items ( 2 x Dragon or 1 x Dragon + Hand of Justice) because the damage is way lower than the 3 items version.

All I'm saying is It's not a terrible choice for a Demon Machine armour for sorceress. Especially considering the availability of jewlers 4 0s armour and 5/5 facets compared to something that the Op would likely already have access to.
