Right now after selecting defaults I have to manually select Europe every time.

You can trade with other regions, though, at least on PC. You just need to go to the bottom-left corner of the Battle.net app, click the globe icon by "Diablo II: Resurrected", and set it to one of the other two regions.
Slapping me on discord might be faster.
