Let's say I have 100 unid hellfire torches in expansion.
If I convert them to rotW, will they have a chance to be warlock torches?
i.e. are the stats defined at finding or when identified?

Can be used to make Runewords:
At finding, no warlocks for you. :/
Can trade on LoD, RotW, and Ladder/Non-Ladder
Please be aware, all my trade is in non ladder d2r. Not warlock.
Items are generally "locked in" as they drop.
You can't see the stats until you ID it of course but they are there.
As such, any torch dropped before RotW but only identified afterwards still cannot be a warlock torch.
So...not a good time to buy UNID torches atm.

Then again, the longer you wait, the more the "warlock hype" dies down so the values for their gear normalize and you won't lose out on as much even if ya still unknowingly buy an old one.
Right now though, yeah, I'd keep my hands off any unid torches.
