They do, unless you bind a champion or unique.
However, extra fast, spectral hit, and extra strong are all available automatically at bind lvl 15 soft skill or higher, so they don’t actually improve your demon since it will get that no matter what
Yea all of them apply to regular monsters, just not to champions or uniques (or minions of unique packs)
