searching for all the various breakpoints out there is pretty easy, at least when it comes to FHR, FRW, FCR and FBR.
But, what about attack speed breakpoints?
I searched multiple sites on google but found nothing.
Every site lists Faster Cast Rate, Block Rate, Run/Walk and Hit Recovery, but no word about ias, why?
And how do I figure out the desired ias breakpoints to properly gear my char around it?

Breakpoints for IAS depend on too many variables (item, skill, character, equipment) to be put in simple tables. There are online IAS calculators available.

It's based on warren's ias calculator which is the most up to date calculator I'm aware of.
