No, once an item has any number of sockets, it's impossible to change it.

Interestingly, it's not quite the same as torch/anni/gheeds, where you cannot even pick up the item if you have one in your inventory. For uber jewels, you can have multiple jewels in your inventory, or multiple items socketed with uber jewels. You just can't equip multiple uber jewels at once.
It might be a nice QoL change if they made it so torch/anni/gheeds (especially unid) were able to be picked up and were simply disabled (just like being underleveled) if you have multiple identified copies in your inventory.
