This is what I could find on amazonbasin:
So it seems like it works as a global modifier bonus to your total defense.When Enhanced Defense spawns on any other item which does not have a defense value of its own, then this is treated as a +% Defense bonus and added to other bonuses of that type.

Off-armor %ED is treated the same as defense skills, e.g. Frozen Armor, Shout, Holy Shield, etc.
Each bonus is added as a multiplier to your total base defense.
