I got a ethereal colossus Volgue and did the cube recipe and got 1 socket. I thought I could do it over again but I cant obviously. Have I ruined it with my stupid misstake or can I make it 4 sock somehow?

pretty sure once you've cubed it for sockets, that's it. The recipe only works with normal White item with no sockets in it. It's essentially 1/6 chance to roll 4 socket if I remember correctly

Both, cube-socketing and Larzuk only work on base items that do not yet have sockets.
So yes, can only do it once.
In this particular case, cubing was an unnecessary gamble as Larzuk would've guaranteed 4 sockets in a Colossus Voulge, due to him always adding the max number of sockets possible for the item you're giving him.
