Redemption only restores life & mana to the aura user, so if you gave an Act 5 merc a Phoenix it would only restore his own life, not yours (nor your mana).
But if you don't want to use an Insight merc, you can always put a single point into Redemption yourself and switch to it periodically mid/post-battle to restore life/mana.

I have a hammerdin already and I do exactly this. I swap for a short period of a time to Redemption if I want my act 2 Holy Freeze merc to wield a more powerful weapon, such as Obedience and The Reaper's Toll. Phoenix is a very expensive runeword. Better put 1 point in Redemption and continue with ac2 2 merc with a more powerful weapon.
Act 5 merc is perfectly viable. The only real concern you should have is if the absence of Insight's Meditation aura will affect your build's performance. In particular what your mana and health sustain looks like in its absence. You can put like 1 point into Meditation yourself and switch to it or same for Redemption for when you need to top up but if you can afford a Phoenix you don't even have to worry about this.

And to save that point for something better, you can build Call To Arms in a War Scepter with +1-3 Redemption. Just have Aura active and press w when you need to restore

It should be mentioned that it's not only the manaregen and small life regen by Meditation alone. It's the tri-synergy of Meditation - Cleansing (Cure) and Prayer you'll be missing. Hammer pala is often in the middle of the fight, taking lots of hits. Enigma's life regain alone is not enough to play "potionless". Poison hits hard from some 96 terrormobs. Curse has big potential to let you die by the underestimated damage potential of some mobs.
